Smoked Paprika Powder La Chinata
Smoked Paprika Powder La Chinata is the product resulting from the milling of ripe red peppers,
dried in a traditional process with either oak wood or holm oak wood.
Smoked Paprika Powder La Chinata is cultivated and produced in the region of
La Vera, located north of the province of Cáceres, Spain.
Smoked Paprika Powder La Chinata is protected by the Guarantee of Origin
"Pimentón de la Vera" certifying its lineage and quality.
The "Pimentón de la Vera" is a product that has a smoky flavour and aroma, due to its drying process
and its colour is red with relative brightness.
In addition to its high colouring power, its flavour, aroma and colour are very stable
due to the slow drying process used in its elaboration.
The genuine drying process gives the Smoked Paprika Powder La Chinata a distinct aroma, a deep
and rooted flavour and colour stability, distinguishing it from any other paprika powder.

The Peppers
For the elaboration of our Smoked Pepper PDO La Vera La Chinata ", in any of its 3 varieties
(sweet, sweet and sour or spicy), we chose the best peppers from the La Vera region, obeying a meticulous selection.
The varieties of peppers used are mainly Jaranda, Jariza and Bola.
Drying
The fruits are collected in the fields - mature, healthy and clean - and immediately transported
to the dryers on the farms themselves.
The drying process of the peppers is carried out in a traditional way,
thanks to the combustion of oak and / or holm oak wood.
This process lasts about 15 days, so that the precious fruits
are dry and smoked at the sweet spot.
Milling
After a rigorous control process in the reception of the raw material, the grinding process
starts with a first phase of cleaning and crushing the dried peppers.
The peppers already crushed and cleaned are directed to the grinding system,
composed of 8 (eight) Stone Mills in a row.
These mills work by rubbing two granite stones, through which the crushed pepper
passes, until the right degree of grinding is obtained.
Once ground, it is kept in excellent condition until it is packaged and sold,
under the control of the PDO "Páprica de La Vera".
